"Pure honey" and "natural honey" labels don't guarantee raw. Look specifically for "raw" or "unpasteurized" on the label. Some imported honey has been found to contain added sugars or be ultra-filtered to hide its origin.

Here are the signs of truly high-quality honey:
Real honey naturally crystallizes over time. This is a sign of authenticity, not spoilage. You can gently warm it to return to liquid state.
Quality honey has a distinct floral aroma matching its source. Processed honey often smells neutral or overly sweet.
Pure honey moves slowly and doesn't immediately dissolve in water. It should hold its shape briefly when drizzled.
Quality producers list the source location and often the beekeeper. Vague origins are a red flag.
Honey isn't just sugar water from bees. It's a complex mixture of bioactive compounds that scientists are still working to fully understand. The floral source, geography, and processing all influence what ends up in the jar.
Flavonoids and phenolic acids from floral nectar are key drivers of honey's antioxidant activity. Darker honeys tend to contain higher concentrations. These compounds vary dramatically by floral source — which is why different honey varieties have different health profiles.
Bees add enzymes like glucose oxidase, which produces hydrogen peroxide — one of honey's primary antimicrobial agents. Diastase and invertase break down sugars. These enzymes are heat-sensitive, which is why raw honey retains properties that pasteurized honey loses.
Low water activity (~0.6), acidic pH (3.2–4.5), and high osmolarity create an environment where most bacteria simply can't survive. These aren't added — they're inherent to how bees process nectar into honey.
Research consistently shows a strong correlation between honey color (measured on the Pfund scale) and total phenolic content.
Phenolic compounds from floral sources — including flavonoids like quercetin, kaempferol, and chrysin — significantly influence honey's antioxidant capacity and vary widely by botanical origin (Becerril-Sánchez et al., 2021). This is why comparing antioxidant levels across honey varieties requires understanding each one's unique floral chemistry.
When you see health claims on variety pages — including ours — the strength of the evidence depends on whether researchers have studied that specific honey, or are inferring from the plant's known chemistry. We try to be transparent about this distinction on every variety page. As a general rule: darker honeys deliver more antioxidants, raw honey preserves more enzymes, and monofloral honeys have the most targeted compound profiles.
Crystallization is completely natural and actually indicates pure, unprocessed honey. Honey is a supersaturated sugar solution — over time, glucose separates from the water and forms crystals. The speed depends on the glucose-to-fructose ratio, temperature (fastest around 50-59°F), and pollen content which provides crystal nucleation points.
How quickly different honeys solidify at room temperature
Honey has an almost indefinite shelf life when stored correctly. Archaeologists have found 3,000-year-old honey in Egyptian tombs that was still edible!
Store at 50-70°F (10-21°C). Avoid heat sources.
Keep sealed. Honey absorbs moisture and odors.
Light can degrade quality over time.
Refrigeration accelerates crystallization without providing any benefit. Honey's low water content naturally prevents bacterial growth.
