  1. Warm the Honey

    Pour honey into a small saucepan over low heat. Warm gently for about 1 minute—you want it warm enough to accept flavors, not hot.

  2. Add Heat

    If using hot sauce, stir it in now. If using whole dried chili peppers, add them to the warm honey to infuse.

  3. Simmer & Develop

    Let the mixture simmer gently for 5–8 minutes over low heat. Add apple cider vinegar and cayenne pepper. Taste and adjust heat and salt as needed.

  4. Cool & Strain

    Remove from heat and let cool for 2 minutes. If using whole peppers, carefully strain them out through a fine-mesh sieve. Transfer to a jar for storage.
